Raw Fig and Cacao Valentine’s Day Truffles
2 cups raw almonds
2 tablespoons coconut oil
1/2 cup coconut nectar (or honey or agave)
2/3 cup raw cacao powder
6 dried figs
3/4 cup finely shredded coconut
In a food processor, grind the almonds into a fine meal. Add the remainder of the ingredients except the shredded coconut and pulse until all the ingredients are well mixed together and resemble a cookie dough. Using a small ice cream or cookie scooper or a teaspoon scoop out a small portion of the dough. With your hands (I would recommend dipping your finger tips in water to prevent sticking) roll the dough into a small balls. Place the shredded coconut into a shallow bowl or plate and roll the balls in the mixture until completely covered with the shredded coconut. Place the truffles into the refrigerator to chill and set for at least 30 minutes. Then share with a loved one for a sweet and healthy Valentine’s Day treat. For best results, keep the truffles in the refrigerator.
