Here is another easy but substantial salad that makes a full meal. Chicken with bacon makes for a rich and satisfying dinner!
Ingredients:
100 g. romaine lettuce
150 g. chicken breast
100 g. of bacon
8 quail eggs
8 cherry tomatoes
60g. of gherkins
100 g. homemade mayonnaise
30 g. parmesan
20 ml. olive oil
sat and pepper to taste
Preparation:
Fry well seasoned chicken breast on grilling pan. Cut bacon into medium strips and sear until golden brown. Cook quail eggs, chill, remove egg shells, cut into halves.
Cut cherry tomatoes, finely chop gherkins, then cut chicken breast into slices. Mix all vegetables, chicken and lettuce, add homemade mayonnaise. Serve with shaved parmesan.
