Nothing goes together like peanut butter and chocolate… add in some bacon, and these cookies are top of the list!
1/2 cup (125 mL) unsalted butter, at room temperature;
1/2 cup (125 mL) peanut butter
1/2 cup (125 mL) granulated sugar
1/2 cup (125 mL) dark brown sugar
1/2 tsp (2 mL) vanilla extract
1 large egg
1 1/4 cup all-purpose flour
1/2 tsp (2 mL) table salt
1 cup chocolate chips
4-6 strips bacon, fried and crumbled
Pre-heat oven to 375ºF
Cream butter, peanut butter, sugars, vanilla and egg until fluffy and light colour, about 2 minutes.
In another bowl, combine flour, salt, baking powder. Stir flour mix into peanut butter mixture. Stir in chocolate chips.
Using a tablespoon, scoop dough into hands and roll into a ball. Then place onto an ungreased baking sheet and place about 2″ (5 cm) apart. Squish with a fork. Sprinkle bacon over top of each cookie and squish again.
Bake to desired doneness,about 8 to 10 minutes. Cool 5 minutes in pan. Transfer to wire racks to cool completely.
