my dad is an amazing cook. he makes everything from scratch. while visiting him in vegas, he taught me how to make italian sausage from scratch starting by grinding the meat, seasoning it, and putting it into the casings..it’s the most amazing italian sausage i’ve ever had. his meatballs and gravy are to die for too.
because we live so far away from one another, i thought i would try my hand at cooking some of the old italian recipes that have been passed down through generations.
i’m not confident that i’m getting everything right, so i’ll use vimeo to communicate with my dad and hopefully tweak the recipes by showing my dad these videos.
this is my first attempt at escarole soup. it’s a chicken broth based italian soup made with with tiny meatballs and lots of escarole.
