This recipe combines asparagus, peas, leeks and couscous cooked in vegetable broth to make a light meal or a lovely side dish. If you don’t love asparagus, change it out for zucchini, yellow summer squash or broccoli. Crumble a bit of feta or Parmesan on top and serve with fresh Italian parsley or basil, and season with salt and pepper! VG7
