Carla, 90, teaches her granddaughters how to make a traditional dish of Modena, tortellini, a ring-shaped pasta.
RECIPE FOR TORTELLINI
Ingredients for 300 gr pesto:
100 g veal
200 g finely ground pork
100 g prosciutto
1 spoon of butter
100 g Parmesan Cheese
a pinch of nutmeg
a pinch of salt
Ingredients for pasta:
500 g white flour “00”
Ground together meat pesto made by veal, pork, mortadella, prosciutto.
Cook meat pesto for 15 minutes with one spoon of butter. Take off stove and leave resting. Add parmesan cheese, 1 egg, a pinch of salt and grated nutmeg.
To make tortellini’s pasta, combine flour and eggs on a wooden cutting board. Shape the flour like a crown, and break the eggs in the center of the crown carefully. Knead the dough until it becomes smooth and round. Leave resting for 10 minutes.
Roll out the dough by hand (or with dough roller machine). Fold tortellini with meat in the center, as seen in the video.
This recipe makes for about 300 tortellini. You should cook 50 tortellini per person.
