Recipe: Raspberry Ginger Pecan Muffins
Butter, for greasing
1/2 cup natural full fat yogurt
1/2 cup full fat milk
2 eggs, lightly beaten
1/2 cup olive oil
1 large apple (2 small apples), cut into 1cm dice
1 cup raspberries
1 tablespoon ginger, finely grated
2 1/2 cups spelt flour
2 1/2 teaspoons of baking powder
1/2 cup brown sugar
1/2 cup raw sugar
1/2 pecans, coarsely chopped
2 tsp ground cinnamon
Preheat oven to 350° F
Grease 2 (6-hole) texas muffin pans.
In a large bowl whisk yogurt, milk, eggs and oil, until well combined. Add apple, raspberries, and ginger. Stir to combine.
In a separate bowl combine remaining dry ingredients. Make a well in the center. Add wet ingredients. Stir until just combined. Don’t over mix.
Pour mix into pans.
Place pecans on top.
Bake for 25-30 min, or until cooked.
